I am thoroughly enjoying my new journey of self employment. It is hard work and I’m extremely busy, but I make sure to set aside some time here and there to do the things I love. Yesterday afternoon, I prepped some dough which I baked into loaves early this morning. This is the second set of loaves I’ve made with the dutch oven. It’s a white country bread named “Pain de campagne”. The textures and smells are much better this time around. Aside from eating the bread, I get a lot of enjoyment listening to it crackle while it cools after pulling it out of the oven.
